What is permeate?
Permeate is a natural watery by-product of milk processing. Protein levels of milk can change due to seasonal variations and some dairy companies add permeate to milk to dilute the protein levels throughout the year - this is called standardisation. By removing permeate, milk becomes less processed and follows the natural seasonal variations in protein levels.
Removing permeate from milk does not follow any health or safety concerns, but rather the response to consumer feedback over the processing of their milk. A recent survey conducted by Lion, parent company of Pura and Dairy Farmers, found that 76% of Australians have become more concerned about how processed their food is nowadays.*
What does permeate free milk mean to me as a Hudsons Coffee drinker?
It simply means that the milk is less processed, providing the nutritional goodness and delicious taste of fresh milk - closer to how it is on the farm.
